Hungry Bears Take Silver

The Bellevue Club women's Tennis team, the Hungry Bears, took second place in USTA Nationals!


Nationals were held in Tucson, Ariz. Oct. 12-14, where the ladies were undefeated in pool play, winning their matches against Northern California, Southern States and Hawaii. They won their bracket and were also sectional champions.

They competed against a New England team during the semifinal, serving up yet another win! Unfortunately, the ladies lost their final match to a tough team from Dallas, Texas, with a score of 3-2, securing their silver medal.



There's a lot to be proud of, though, after a great season on the court. The Hungry Bears finished their season with a record of 20-1. Congratulations!

Fall Basketball League Championship Game

The Bellevue Club Fall Member’s-Only-Draft League basketball championship game will be played Tuesday, Dec. 11 at 7 p.m.

This is a 4-on-4 draft league for members 16 and older. We have six evenly matched teams fighting for the title this season. It has been a long, competitive season and only one squad will come out victorious. Stop by the gym to see who takes it all!

Healthy Thanksgiving Alternatives

FROM THE BELLEVUE CLUB NUTRITION TEAM
If you love Thanksgiving, but don't love all the calories that come with it, here are a few healthy recipes created by Bellevue Club dietitians. Try one, or try them all, and let us know how you like them!

BAKED CORNISH HENS
2 Cornish hens, split lengthwise
3 tablespoons lemon juice
3 tablespoons olive oil
2 cloves finely chopped garlic
2 tablespoons dry rosemary (other dried herbs)

Preheat oven to 450 degrees. Mix lemon juice, olive oil, garlic and rosemary together in bowl. Place hens on baking sheet skin side up. Poor mixture over hens. Bake 35 to 40 minutes.
Cornish Hen
BAKED BROCCOLI
If you get this just right it will be like eating a healthy bag of potato chips—crispy, crunchy and mouth watering!

2 heads of broccoli
1-2 teaspoons salt
1 teaspoon pepper
1 tablespoon olive oil

Pre-heat oven to 475 degrees. Cut broccoli florets (top of broccoli) and rinse. Place on baking sheet and sprinkle with salt and pepper. Evenly pour olive oil over top of broccoli. Mix and spread mixture around with hands so that the broccoli is evenly covered in salt, pepper and olive oil. Place the broccoli in the oven for 10-15 minutes. Start checking it at 10 minutes. You are looking for blackened tips and a crispy texture. Enjoy!

Makes 4 servings
Per serving: Calories 50, Fat 4g, Carbohydrates 4g, Fiber 1g, Protein 2g
Broccoli
PuddingVANILLA PUMPKIN PUDDING
8 ounces nonfat vanilla yogurt
½ cup canned 100% pure pumpkin puree (no added sugar)
1 tablespoon slivered almonds or chopped walnuts
Dash cinnamon

In a small bowl, blend or layer the yogurt and pumpkin. Top with nuts and cinnamon.

Squash pro joins the BC team

The new BC squash pro, Latasha Khan.

The Bellevue Club is excited to announce we have a new squash pro ready to help you take your game to the next level.

Latasha Khan is a seven-time U.S. national champion, was the first American to win an individual gold medal at the Pan American Games in 2003, holds 10 WSA world tour titles and is currently ranked No. 27 in the world. She still plays on the squash tournament circuit and will be available for private and semi-private lessons Tuesdays, Wednesdays and Saturdays when she's in town.

Private lessons are $45 for 30 minutes, $67.50 for 45 minutes and $90 for 60 minutes. Semi-private lessons for two people are $40 each for a 60 minute lesson. Group private lessons for three to four people are also available for $20 a player for a 60 minute lesson.

Lessons begin Nov. 6 and can be scheduled at the Athletic Services Desk, by calling 425-688-3177 or by emailing athleticservices@bellevueclub.com. In addition, a meet and greet squash clinic is in the works.
